Lab-Created Salmon Fat Is Next on the Fake Foods Menu


Most likely spurred by the success of fake blood and burgers created in a lab to feed folks of the 21st century and beyond, a Dutch startup is aiming to create fake salmon fat and seafood to add to the menu.

Upstream Foods is hoping to make its fake salmon fat a success in what has so far been a disappointing venture from the fish end of lab-created goodies. The quality of plant-based seafood “just isn’t there yet,” Kianti Figler, Upstream’s founder and CEO, admitted to an international gathering in The Netherlands.

Since taste/flavor ranks near the top of consumers’ expectations when choosing to eat lab-created foods, then that is what Upstream will focus on. To do that, they’ve got to perfect fake salmon fat.

Specifically, Food Navigator reported that the company will take cells from salmon, turn them into a proprietary cell line, cultivate them in a bioreactor, combine the fat with a plant-based matrix and voila! If all goes as planned, the resulting product will taste like seafood.
